Colleen's Microwave Fudge
Colleen Shannon

"I got this recipe from a county fair from the people I bought my first microwave from years ago. I've been making it ever since and it is always a hit. Everyone loves it. The best part is that it takes no time and it NEVER fails!" Colleen Shannon

Ingredients:
1 lb. powdered sugar
1/2 cup evaporated milk
1/2 cup cocoa (I use Hershey's)
1 stick of margarine
1 tbsp. vanilla (I use Watkins)
1 cup of chopped nuts (I use walnuts)

Procedure:

Micromelt margarine and mix with the sugar, cocoa, and milk. Cool for 3 minutes on High. Add vanilla and nuts. Mix well. Pour into a buttered 8 x 8 inch pan. Let cool before cutting into squares. You can freeze it for 20 mins or refrigerate for 1 hour if you wish to cool it off faster.

You can double the recipe (I always do) If you do this, you should cook for 6-8 minutes stirring once at about 4 1/2 to 5 minutes so it heats evenly. Then pour into a buttered 9 x 13 inch pan.

Since microwaves vary, you may have to experiment a little. It bubbles up vigorously all around the outside of the bowl right before cooking time is done. If you cook it too long, it will be too hard and crumbly. If you don't cook it long enough, it will be a little soft. My suggestion is to make a single batch first to get the feel for it.
