Taco Chicken Candice Duer |
This is a great alternative to a plain chicken meal. My kids love this and
they are very picky eaters. Hope you'll enjoy...
Ingredients:
1- lb. Bonless all white chicken breast. Cut into small cubes.
(you may use bonless dark meat if you prefer)
1- 8oz. can Diced Tomato's
1- 4oz. can diced green chiles
1- pack taco seasoning
1/2- cup Monterey Jack cheese
1/2- cup Colby cheese
You may use 1- cups of Colby-Jack cheese.
1- 8oz container sour cream (if desired).
1/4- cup finley chopped mild onions (if desired).
1- bag any kind tortilla chips (SMASHED), even stale ones are great..
Procedure:
Saute chicken breast, onions and chiles in a large pan over med. high heat.
Cook till chicken is done. Then make the taco seasoning pack by the
instructions. Except your subin chicken for beef. Cook till done. Then add
tomatos.
Then in a casserole pan. Layer chips then chicken then cheese, just like you
do lasagna..Till all the chicken, cheese and chips are gone.
Cook in preheated 350 degree oven for 30 to 35 minutes.
After top with sour scream (if desired) and a dash of salt and pepper.
